Put flour and yeast in a large bowl and pour in 400 ml of H2O. The dough will be wet.
Mix. Rest for 10 mins.
Knead for 10 mins.
Rest for 10 mins.
Place the dough in a bowl with olive oil and let rise 90mins., (Knead for twice every 30 mins.). To Knead lay the dough out on flour and fold and 1/3 and 1/3 then turn the dough 90 degrees and fold over into thirds. Place the dough in the oiled container
Shape the dough into rectangles. Dust with flour and let rise for 40 more mins.
Preheat oven to its highest temperature.
Place the dough in the oven. Spray with water. Bake for 20 mins. then rotate and bake 10 more mins.
